It is amazing how exceptional food can transform what might be just another meal into a memory that is cemented in your own personal history. We were lucky enough to have that experience on a recent trip to Brooklyn to visit Andy and Sarah. Sitting in Andy's living room listening to some soulful jazz, we had no clue what we had in store for us. In what would be generously described as a typical tiny NYC kitchen, Andy proceeded to roll out items that were distinctly focused on flavor.

It all started with a fish soup that rivaled any found in the best Thai restaurant. Next was a roasted chicken that tasted like it had been brined for days. Parsnips, broccolini, and autumn squash joined the table with a garlic-scented potato puree that was perfection. We rounded out the meal with a selection of cheeses from around the world, and a simple and elegant late-season plum sorbet.

Each course was paired beautifully with Italian varietals that completed the melody of the senses. The true talent shown by Andy that night was taking simple ingredients and making them extraordinary, and allowing all of us to enjoy a 5-star meal in the cozy comfort of a friend's home.  It is such a natural transition for Andy to take his talent and experience into the private market.  His cooking expertise, wine knowledge, and the graciousness he brings to everyone he meets, make him the perfect chef for any event; in-home or otherwise.

The true gift as a host is being able to keep all your focus and enjoyment on your friends and the dining experience, while having the confidence that you, and your guests, will be reminiscing about that evening for years to come.  

I am envious of the people of Portland for having Andy's wonderful offerings at their disposal!  I wish I could convince him to bring Home Skillet to Austin!
